Description
A delicious homemade apple pie filling made with firm apples and warm spices.

- 6 cups peeled, cored, and sliced firm apples
- 1 cup apple cider or water
- 0 cup granulated sugar
- 0 cup light brown sugar, packed
- 0 cup cornstarch
- 1 teaspoon ground cinnamon
- 0 teaspoon ground nutmeg
- 0 teaspoon ground allspice, optional
- 0 teaspoon fine sea salt
- 2 tablespoons fresh lemon juice
- 2 teaspoons pure vanilla extract
- 2 tablespoons unsalted butter
Instructions
- Peel, core, and slice the apples into even 1/4-inch slices and set them aside.
- In a large saucepan, whisk together the apple cider or water, granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, allspice, and salt until no dry streaks remain.
- Place the saucepan over medium heat and cook, whisking often, until the mixture comes to a gentle simmer and thickens into a glossy syrup, about 3–5 minutes.
- Stir in the sliced apples, making sure they are well coated in the thickened syrup. Reduce heat to medium-low.
- Cook the apples, stirring frequently, for 8–10 minutes, or until they are tender but still hold their shape and look slightly translucent around the edges.
- Remove the pan from the heat and stir in the lemon juice, vanilla extract, and butter until the butter has melted and the sauce is smooth and silky.
- Taste and adjust the flavor with a little extra lemon juice or cinnamon if desired.
- Let the filling cool until just warm before using in a pie, or cool completely and transfer to jars or airtight containers for storing in the refrigerator or freezer.
Notes
- This filling can be made ahead of time and stored in the refrigerator for up to a week.
- It can also be frozen for later use.
