Cabbage and Beef Casserole

Description

A delicious and hearty casserole made with cabbage, ground beef, and tomatoes.


Ingredients

Scale
  • 1/2 head cabbage (cubed, enough to cover the bottom of pan in a thick layer)
  • water (for boiling)
  • 1 lb. ground beef
  • 1 cup diced tomatoes (or rotel)
  • 1/2 onion (diced)
  • 1 bell pepper (diced)
  • 1 tsp apple cider vinegar
  • 1 tsp sugar
  • 1 tsp garlic powder
  • 1 cup cheddar cheese (shredded, optional)
  • salt and pepper (to taste)

Instructions

  1. In a preheated frying pan, fry all of the meat, onions, and diced green pepper. As soon as the meat is browned, add all of the tomatoes, vinegar, sugar, and seasonings. Stir.
  2. Fill a pot halfway with water and a pinch of salt over medium-high heat until it reaches a consistent boil. Chop the cabbage into large bite-size pieces and submerge. Boil for 3-5 minutes or until al dente but softened. Drain.
  3. Place the cabbage in a baking dish. Place the minced meat mixture on top. Cook for 15-18 minutes at 350°F. Add cheese to the top and cook for another 3-4 minutes until melted. Serve with salt and pepper to taste.

Notes

  • This dish can be made ahead of time and stored in the refrigerator before baking.
