Description

Delicious cranberry orange muffins that are perfect for breakfast or a snack.


Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 3/4 cup fresh orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh or frozen cranberries

Instructions

  1. Preheat oven to 400°F (200°C) and line a 12-cup muffin pan with paper liners or lightly grease the cups.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk melted butter, eggs, orange juice, orange zest, and vanilla extract until well combined.
  4. Add wet ingredients to dry ingredients and stir until just combined. Gently fold in the cranberries.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. Serve warm or at room temperature.

Notes

  • These muffins can be made ahead of time and stored in an airtight container.
  • For extra flavor, consider adding a pinch of cinnamon or nutmeg to the dry ingredients.
