Description
A delicious and healthy garlic broccoli pasta dish made with whole wheat pasta and topped with Parmesan and walnuts.
Ingredients

- 8 ounces whole wheat pasta
- 2 cups broccoli florets
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped walnuts
- 1/2 teaspoon red pepper flakes
- Salt to taste
- Black pepper to taste
Instructions
- Cook pasta according to package directions in salted boiling water. Add broccoli florets during the last 3 minutes of cooking.
- Drain pasta and broccoli, reserving 1/2 cup (120ml) of pasta water.
- In a large pan, heat olive oil over medium heat. Add minced garlic and cook for 1 minute until fragrant.
- Add cooked pasta and broccoli to the pan. Toss to combine with garlic oil.
- Stir in Parmesan cheese, walnuts, and red pepper flakes. Add reserved pasta water as needed to create a creamy sauce.
- Season with salt and black pepper to taste. Serve immediately.
Notes
- This recipe can be made vegan by omitting the Parmesan cheese or using a dairy-free alternative.
- Feel free to add other vegetables to the dish, such as spinach or peas.
