Delicious and fluffy banana pancakes made with pantry staples.
Ingredients

- 2 cups Bisquick mix (or any pancake mix)
- 1 ¼ cups Whole milk or your favorite non-dairy milk
- 2 Eggs
- 2 Bananas (Brown and Spotty)
- 1 teaspoon Vanilla Extract
Instructions
- In a medium bowl, add the bananas and mash them thoroughly until very smooth.
- Stir in the eggs, milk, vanilla extract, and baking mix. Mix until just combined. It’s fine if the batter has a few small lumps—there’s no need to overmix.
- Heat a griddle or skillet over medium heat and add a small amount of butter to coat the surface.
- Pour about ¼ cup of batter onto the pan for each pancake. Cook until bubbles form on the surface and the bottom is golden brown, about 2–3 minutes.
- Flip and cook the other side for another 2–3 minutes, until golden and cooked through.
- Serve warm with maple syrup, butter, fresh banana slices, and nuts.
Notes
- These pancakes can be frozen and reheated for a quick breakfast.
- Add chocolate chips for an extra treat!
