Description

Delicious and healthy banana oatmeal pancakes made with simple ingredients.


Ingredients

Scale
  • 1 cup old-fashioned rolled oats, gluten free if desired
  • 1 medium banana
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • ½ teaspoon cinnamon
  • 2 eggs
  • ½ cup cottage cheese
  • as needed Toppings of your choice

Instructions

  1. Add all ingredients to a blender and blend on high until completely smooth, about 30 seconds.
  2. Lightly coat a large nonstick skillet or griddle with cooking spray and heat over medium-low. Pour about ¼ cup of batter onto the skillet for each pancake.
  3. Cook until bubbles form on the surface. Flip and cook the other side until golden brown.
  4. Wipe the skillet clean, re-spray with cooking spray, and repeat with the remaining batter.
