Description

Delicious and gooey chocolate chip cookies that melt in your mouth.


Ingredients

  • 120g / 1/2 cup Dark Chocolate, chopped
  • 60g / 1/4 cup Chocolate Chips (optional)
  • 115g / 1 cup Plain Flour
  • 150g / 3/4 cup Demerara Sugar
  • 50g / 1/4 cup Caster Sugar
  • 115g / 1/2 cup Butter (salted or unsalted)
  • 2 large Eggs
  • 25g / 1/4 cup Cocoa Powder

Instructions

  1. Melt the butter and dark chocolate together in a small saucepan over low heat (or in a microwave), stirring continuously until smooth.
  2. In a separate bowl, whisk the eggs and sugar until very pale and fluffy.
  3. Whisk the cocoa powder and flour together in a bowl to ensure even distribution without lumps.
  4. Slowly pour the melted chocolate mixture into the egg mixture, stirring gently to prevent the eggs from scrambling.
  5. Fold in the flour-cocoa mix and chocolate chips (if using) until the batter is thick and slightly gooey.
  6. Drop rounded tablespoons of cookie dough onto the prepared baking sheet, leaving space between each cookie.
  7. Bake for about 8-10 minutes. The edges should be set, but the centers will still be soft.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
