- 120g / 1/2 cup Dark Chocolate, chopped
- 60g / 1/4 cup Chocolate Chips (optional)
- 115g / 1 cup Plain Flour
- 150g / 3/4 cup Demerara Sugar
- 50g / 1/4 cup Caster Sugar
- 115g / 1/2 cup Butter (salted or unsalted)
- 2 large Eggs
- 25g / 1/4 cup Cocoa Powder
Instructions
- Melt the butter and dark chocolate together in a small saucepan over low heat (or in a microwave), stirring continuously until smooth.
- In a separate bowl, whisk the eggs and sugar until very pale and fluffy.
- Whisk the cocoa powder and flour together in a bowl to ensure even distribution without lumps.
- Slowly pour the melted chocolate mixture into the egg mixture, stirring gently to prevent the eggs from scrambling.
- Fold in the flour-cocoa mix and chocolate chips (if using) until the batter is thick and slightly gooey.
- Drop rounded tablespoons of cookie dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for about 8-10 minutes. The edges should be set, but the centers will still be soft.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For a richer flavor, you can use high-quality dark chocolate.
- Ensure not to overbake for soft, chewy cookies.
