Herb Chicken Cutlets

Description

Delicious and easy-to-make herb chicken cutlets baked with marinara and cheese.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 teaspoon chopped fresh thyme
  • 1 teaspoon chopped fresh rosemary
  • 1 teaspoon chopped fresh Italian parsley
  • 4 chicken cutlets (about 3 ounces each)
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ¾ cup marinara sauce (homemade or jarred)
  • ¼ cup shredded mozzarella cheese
  • 8 teaspoons grated Parmesan cheese
  • 1 tablespoon unsalted butter, cut into small pieces

Instructions

  1. Preheat your oven to 500°F.
  2. In a small bowl, mix olive oil, thyme, rosemary, and parsley to create herb oil.
  3. Brush both sides of each chicken cutlet with the herb oil and sprinkle with salt and pepper.
  4. Heat a large skillet over high heat, and sear the chicken cutlets for about 1 minute per side until golden brown.
  5. Remove from heat, spoon marinara sauce over the cutlets, and top with mozzarella and Parmesan cheese.
  6. Dot with pieces of butter, then transfer to the oven and bake for about 5 minutes or until the cheese is melted and bubbly.
  7. Remove from the oven and serve hot, with extra marinara sauce if desired.

  • For best results, use fresh herbs.
  • Serve with a side salad or pasta for a complete meal.
