Description
Delicious and easy-to-make herb chicken cutlets baked with marinara and cheese.
Ingredients

- 1 tablespoon olive oil
- 1 teaspoon chopped fresh thyme
- 1 teaspoon chopped fresh rosemary
- 1 teaspoon chopped fresh Italian parsley
- 4 chicken cutlets (about 3 ounces each)
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- ¾ cup marinara sauce (homemade or jarred)
- ¼ cup shredded mozzarella cheese
- 8 teaspoons grated Parmesan cheese
- 1 tablespoon unsalted butter, cut into small pieces
Instructions
- Preheat your oven to 500°F.
- In a small bowl, mix olive oil, thyme, rosemary, and parsley to create herb oil.
- Brush both sides of each chicken cutlet with the herb oil and sprinkle with salt and pepper.
- Heat a large skillet over high heat, and sear the chicken cutlets for about 1 minute per side until golden brown.
- Remove from heat, spoon marinara sauce over the cutlets, and top with mozzarella and Parmesan cheese.
- Dot with pieces of butter, then transfer to the oven and bake for about 5 minutes or until the cheese is melted and bubbly.
- Remove from the oven and serve hot, with extra marinara sauce if desired.
Notes
- For best results, use fresh herbs.
- Serve with a side salad or pasta for a complete meal.
