Description

Delicious gluten-free chocolate chip cookies that are soft and chewy.


Ingredients

  • 1 cup (200g) gluten-free all-purpose flour blend
  • 1/2 cup (113g) unsalted butter, softened
  • 3/4 cup (150g) packed brown sugar
  • 1 large egg
  • 1 teaspoon (5ml) vanilla extract
  • 1/2 teaspoon (2g) baking soda
  • 1/4 teaspoon (1g) salt
  • 1/2 cup (85g) chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together gluten-free flour blend, baking soda, and salt.
  3. In a large bowl, cream softened butter and brown sugar until light and fluffy.
  4. Beat in egg and vanilla extract until well combined.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Fold in chocolate chips if using.
  7. Scoop dough into 1-inch balls and place on prepared baking sheet, spacing about 2 inches apart.
  8. Bake for 10-12 minutes, or until edges are lightly golden and centers are set.
  9. Let cookies cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For a more decadent treat, use dark chocolate chips.
  • Store cookies in an airtight container at room temperature for up to a week.
