Delicious gluten-free chocolate chip cookies that are soft and chewy.
Ingredients

- 1 cup (200g) gluten-free all-purpose flour blend
- 1/2 cup (113g) unsalted butter, softened
- 3/4 cup (150g) packed brown sugar
- 1 large egg
- 1 teaspoon (5ml) vanilla extract
- 1/2 teaspoon (2g) baking soda
- 1/4 teaspoon (1g) salt
- 1/2 cup (85g) chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together gluten-free flour blend, baking soda, and salt.
- In a large bowl, cream softened butter and brown sugar until light and fluffy.
- Beat in egg and vanilla extract until well combined.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Fold in chocolate chips if using.
- Scoop dough into 1-inch balls and place on prepared baking sheet, spacing about 2 inches apart.
- Bake for 10-12 minutes, or until edges are lightly golden and centers are set.
- Let cookies cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For a more decadent treat, use dark chocolate chips.
- Store cookies in an airtight container at room temperature for up to a week.
