Description
A moist and delicious banana bread recipe perfect for breakfast or a snack.
Ingredients
Scale
- 3 ripe bananas, mashed
- 1 cup Greek yogurt
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon (optional)
- 1/2 cup chopped walnuts or chocolate chips (optional)
Instructions
- Begin by preheating your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a large bowl, mash the ripe bananas until smooth. Add the Greek yogurt, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until everything is well combined.
- In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if using).
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to over-mix; it’s okay if a few lumps remain.
- If desired, fold in the chopped walnuts or chocolate chips for an extra layer of flavor and texture.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
- Once baked, remove the loaf from the oven and allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
- Once cool, slice the bread and serve as desired.
Notes
- This banana bread can be customized by adding nuts or chocolate chips.
