Instructions

  1. Begin by preheating your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth. Add the Greek yogurt, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until everything is well combined.
  3. In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if using).
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to over-mix; it’s okay if a few lumps remain.
