- 1½ cups finely grated carrots
- 1 cup crushed pineapple, drained

- 4 oz cream cheese, softened
- ¼ cup unsalted butter, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1–2 tbsp milk (for thinning)
Instructions
- Whisk flour, baking soda, baking powder, spices, and salt.
- In another bowl, mix sugars, oil, eggs, and vanilla until smooth.
- Fold in carrots, pineapple, and nuts; combine with dry ingredients.
- Bake at 350°F (175°C) for 35–40 minutes until set. Cool slightly.
- Beat glaze ingredients until smooth and drizzle over warm cake.

- This recipe makes one 9×9-inch cake.
- Ensure the pineapple is well-drained to avoid excess moisture in the cake.
- You can adjust the amount of milk in the glaze to achieve your desired consistency.
