  • ¼ cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 12 tbsp milk (for thinning)

Instructions

  1. Whisk flour, baking soda, baking powder, spices, and salt.
  2. In another bowl, mix sugars, oil, eggs, and vanilla until smooth.
  3. Fold in carrots, pineapple, and nuts; combine with dry ingredients.
  4. Bake at 350°F (175°C) for 35–40 minutes until set. Cool slightly.
  5. Beat glaze ingredients until smooth and drizzle over warm cake.
