A delicious and creamy shrimp tortellini dish that is perfect for a quick dinner.
Ingredients

- 9 oz fresh or frozen tortellini
- 1 lb raw deveined shrimp
- 1 whole garlic bulb (for roasting)
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese

- 2 tbsp chopped fresh parsley
- 2 tbsp olive oil (for roasting garlic)
- 2 tbsp butter (for sautéing shrimp)
Instructions
- Preheat oven to 400°F (200°C). Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until golden.
- Cook tortellini in boiling salted water according to package instructions until al dente. Drain and set aside.
- In a skillet over medium heat, melt butter. Add shrimp seasoned with salt and pepper; cook until pink and opaque (about 3-4 minutes per side).
- Lower heat and add heavy cream and roasted garlic (squeezed from the bulb). Simmer for 2-3 minutes until slightly thickened.
- Stir in Parmesan cheese until melted and combined.
- Toss cooked tortellini with the creamy sauce in the skillet until well-coated.
Notes
- For a little kick, consider adding red pepper flakes.
- Pair with a side salad for a complete meal.
