Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves fresh garlic, minced
  • 8 oz cremini mushrooms, sliced
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried oregano
  • 1 cup freshly grated Parmesan cheese
  • Salt and Pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Season the chicken breasts with salt and pepper.
  2. In a large skillet over medium-high heat, heat olive oil. Sear the chicken for about 5 minutes on each side until golden brown.
  3. Remove the chicken and add mushrooms and garlic to the skillet. Sauté until softened.
  4. Pour in the chicken broth and bring to a simmer. Stir in heavy cream and oregano until well combined.
  5. Return the chicken to the skillet, spooning sauce over each piece. Simmer for 10 minutes.
  6. Sprinkle Parmesan cheese over the top just before serving.
