Ingredients

- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 cloves fresh garlic, minced
- 8 oz cremini mushrooms, sliced
- 1 cup low-sodium chicken broth
- 1 cup heavy cream
- 1 teaspoon dried oregano
- 1 cup freshly grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Season the chicken breasts with salt and pepper.
- In a large skillet over medium-high heat, heat olive oil. Sear the chicken for about 5 minutes on each side until golden brown.
- Remove the chicken and add mushrooms and garlic to the skillet. Sauté until softened.
- Pour in the chicken broth and bring to a simmer. Stir in heavy cream and oregano until well combined.
- Return the chicken to the skillet, spooning sauce over each piece. Simmer for 10 minutes.
- Sprinkle Parmesan cheese over the top just before serving.
