Description

Ingredients

  • 8 oz spaghetti or linguine
  • 1 lb large fresh shrimp, peeled and deveined
  • 1 cup asparagus, trimmed and cut into 2-inch pieces
  • 3 cloves garlic, minced
  • 1/4 cup freshly squeezed lemon juice
  • 1 zest of 1 lemon
  • 2 tbsp extra virgin olive oil
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Cook the pasta in salted water according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. In a large skillet over medium heat, heat olive oil. Add minced garlic and sauté until fragrant, about 30 seconds.
  3. Add shrimp to the skillet; cook until pink and opaque, about 3-4 minutes per side.
  4. Stir in asparagus; cook for another 3-4 minutes until tender but crisp.
  5. Pour in lemon juice and zest, mixing well. If needed, add reserved pasta water for creaminess.
  6. Toss drained pasta into the skillet with the shrimp mixture; combine gently.
  7. Finish with grated Parmesan cheese, salt, pepper, and red pepper flakes if desired.
