Garlic Mashed Potatoes

Description

Delicious garlic mashed potatoes, perfect as a side dish for any meal.


Ingredients

Scale
  • 2 pounds red potatoes
  • 57 garlic cloves (peeled)
  • 6 tablespoons unsalted butter
  • ½ cup half-and-half (or whole milk)
  • ½ teaspoon garlic powder
  • 1 teaspoon fine sea salt (more or less to taste)
  • Chives (for garnish, as desired)
  • Vegetarian Gravy (for serving)

Instructions

  1. Cut potatoes into approximately 2-inch chunks, or evenly sized pieces, and place in a large saucepan. Add whole, peeled, garlic cloves. Cover with water, about 1 inch higher than the potatoes. Add a generous pinch of salt and bring to a boil.
  2. Cook for approximately 15 minutes until potatoes are fork-tender.
  3. Meanwhile, in a small saucepan, add butter and half-and-half to a skillet. Warm over low heat.
  4. Once the potatoes are fork-tender, drain and return to the saucepan (along with the garlic cloves). Add the garlic powder, 1/2 teaspoon of salt, and about half of the butter mixture. Begin mashing with a potato masher. Continue adding liquid as needed.
  5. Taste test and adjust salt levels.
  6. Transfer to a serving bowl, or leave in the saucepan to serve. Garnish with fresh chives and butter as desired and enjoy! Store any leftovers in an airtight container in the fridge for up to 5 days.

  • For creamier mashed potatoes, add more half-and-half or butter as needed.
