Description
A hearty casserole made with ground beef, vegetables, and topped with cheddar cheese.

- 1 lb lean ground beef
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 medium Yukon Gold potatoes, diced
- 2 cups frozen mixed vegetables
- 1 cup shredded sharp cheddar cheese
- 1 can (10 oz) low-sodium tomato soup
- 1 cup low-sodium beef broth
- Salt and pepper to taste
- 2 tsp dried oregano
- 2 tsp dried thyme
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, add oil and sauté the chopped onion until translucent. Add minced garlic and cook until fragrant.
- Add the ground beef, browning it fully and draining excess fat.
- Stir in diced potatoes and frozen mixed vegetables. Season with salt, pepper, oregano, and thyme.
- Pour in the tomato soup and beef broth; mix thoroughly.
- Transfer the mixture to a greased casserole dish, sprinkle shredded cheddar cheese on top, and bake for about 45 minutes until bubbly.
Notes
- This dish can be made ahead of time and stored in the refrigerator before baking.
- Leftovers can be reheated in the microwave or oven.
