Description

A hearty casserole made with ground beef, vegetables, and topped with cheddar cheese.


Ingredients

  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 medium Yukon Gold potatoes, diced
  • 2 cups frozen mixed vegetables
  • 1 cup shredded sharp cheddar cheese
  • 1 can (10 oz) low-sodium tomato soup
  • 1 cup low-sodium beef broth
  • Salt and pepper to taste
  • 2 tsp dried oregano
  • 2 tsp dried thyme

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add oil and sauté the chopped onion until translucent. Add minced garlic and cook until fragrant.
  3. Add the ground beef, browning it fully and draining excess fat.
  4. Stir in diced potatoes and frozen mixed vegetables. Season with salt, pepper, oregano, and thyme.
  5. Pour in the tomato soup and beef broth; mix thoroughly.
  6. Transfer the mixture to a greased casserole dish, sprinkle shredded cheddar cheese on top, and bake for about 45 minutes until bubbly.
