Description

This Honey Teriyaki Chicken is a deliciously easy slow cooker meal that is savory and sweet, perfect for serving over rice.


Ingredients

  • 2 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/2 cup soy sauce (or tamari for gluten-free)
  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • Cooked rice, for serving
  • Sesame seeds and chopped green onions, for garnish

Instructions

  1. Place the chicken pieces in the slow cooker.
  2. In a medium bowl, whisk together the soy sauce, honey, brown sugar, garlic, ginger, sesame oil, and red pepper flakes (if using).
  3. Pour the sauce over the chicken, ensuring all pieces are coated.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the chicken is cooked through and tender.
  5. About 30 minutes before serving, in a small bowl, whisk together the cornstarch and cold water until smooth.
  6. Remove the lid from the slow cooker and stir in the cornstarch slurry.
  7. Increase the heat to high and cook for 15-20 minutes, or until the sauce has thickened, stirring occasionally.
  8. Serve the honey teriyaki chicken over cooked rice.
  9. Garnish with sesame seeds and chopped green onions.
