Creamy Baked Chicken Thighs

Description

Delicious and flavorful baked chicken thighs with a creamy sauce.


Ingredients

  • 2 pounds bone-in chicken thighs (I use skin-on.)
  • 1 teaspoon Creole Seasoning
  • 1/2 teaspoon ground thyme
  • 1 teaspoon garlic powder
  • to taste salt and pepper
  • 1 teaspoon olive oil
  • 2 tablespoons unsalted butter
  • 1 cup sliced onions (I used a white onion.)
  • 1/3 cup heavy whipping cream
  • 1/3 cup chicken broth

Instructions

  1. Preheat oven to 350 degrees.
  2. Ensure the chicken thighs are dry and season with the Creole seasoning, thyme, garlic powder, salt, and pepper to taste.
  3. Heat a cast-iron skillet on medium-high heat. Add olive oil.
  4. When hot, add the seasoned chicken thighs. Sear both sides for about 2 minutes on each side.
  5. Remove the chicken from the skillet and set it aside.
  6. Add butter to the pan. Use a silicone spoon or wooden spoon to deglaze the pan and scoop up the brown bits.
  7. Add the onions and cook until translucent and fragrant.
  8. Lower heat to medium-low and add chicken broth and heavy cream. Stir to combine for 2-3 minutes, avoiding boiling.
  9. Return the chicken to the pan. Place skillet in the oven and bake for 20-25 minutes.
  10. Use a meat thermometer to ensure chicken has reached an internal temperature of at least 165 degrees before removing from the oven.
  11. Cool before serving.

Notes

  • For added flavor, you can marinate the chicken thighs for a few hours before cooking.
  • Serve with steamed vegetables or over rice for a complete meal.
