Description

Ingredients

  • 1 (9 inch) pastry shell, unbaked or frozen
  • 2 1/2 cups roughly chopped pecans
  • 3 large eggs, at room temperature
  • 1 cup light or dark corn syrup
  • 3/4 cup light or dark brown sugar, packed
  • 3 tbsp unsalted butter, melted and cooled
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prepare the pastry shell in a pie dish.
  3. In a mixing bowl, whisk together brown sugar, corn syrup, and salt.
  4. Add melted butter, vanilla extract, and eggs. Mix until smooth.
  5. Fold in chopped pecans.
  6. Pour filling into prepared pastry shell.
  7. Bake for 55 minutes or until set and golden.
  8. Allow to cool before serving.

Notes

  • For a richer flavor, use dark corn syrup.
