Description

Deliciously soft and flavorful cookies made with sweet potato and warm spices, topped with a sweet glaze.


Ingredients

  • 1/2 cup mashed sweet potato
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup brown sugar (for swirl)
  • 1/2 teaspoon cinnamon (for swirl)
  • 1/2 cup powdered sugar
  • 1 tablespoon honey
  • 1 tablespoon milk

Instructions

  1. Cream together 1/2 cup unsalted butter, 1/2 cup brown sugar, and 1/4 cup granulated sugar until fluffy.
  2. Add 1/2 cup mashed sweet potato, 1 egg, and 1 teaspoon vanilla extract. Mix until smooth.
  3. In a separate bowl, whisk 1 1/2 cups all-purpose flour, 1/2 teaspoon baking soda, 1/2 teaspoon baking powder, 1/4 teaspoon salt, 1/2 teaspoon cinnamon, and 1/4 teaspoon nutmeg. Gradually combine with the wet ingredients.
  4. Mix 1/4 cup brown sugar and 1/2 teaspoon cinnamon in a small bowl. Scoop 2-tablespoon balls of dough, flatten slightly, add swirl mixture in center, fold edges over, and roll back into balls.
  5. Place on lined baking sheet 2 inches apart. Bake at 350°F for 11–13 minutes until edges are set. Cool completely.
  6. Whisk 1/2 cup powdered sugar, 1 tablespoon honey, and 1 tablespoon milk for glaze. Drizzle over cookies and let set.
