- 1/2 cup mashed sweet potato
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract

- 1/2 teaspoon baking powder

- 1/2 cup powdered sugar
- 1 tablespoon honey
- 1 tablespoon milk
Instructions
- Cream together 1/2 cup unsalted butter, 1/2 cup brown sugar, and 1/4 cup granulated sugar until fluffy.
- Add 1/2 cup mashed sweet potato, 1 egg, and 1 teaspoon vanilla extract. Mix until smooth.
- In a separate bowl, whisk 1 1/2 cups all-purpose flour, 1/2 teaspoon baking soda, 1/2 teaspoon baking powder, 1/4 teaspoon salt, 1/2 teaspoon cinnamon, and 1/4 teaspoon nutmeg. Gradually combine with the wet ingredients.
- Mix 1/4 cup brown sugar and 1/2 teaspoon cinnamon in a small bowl. Scoop 2-tablespoon balls of dough, flatten slightly, add swirl mixture in center, fold edges over, and roll back into balls.
- Place on lined baking sheet 2 inches apart. Bake at 350°F for 11–13 minutes until edges are set. Cool completely.
- Whisk 1/2 cup powdered sugar, 1 tablespoon honey, and 1 tablespoon milk for glaze. Drizzle over cookies and let set.
Notes
- Make sure sweet potatoes are well-mashed for a smooth texture.
- Cookies can be stored in an airtight container for up to a week.
