Key Ingredients for Morning Glory Muffins
Morning glory muffins are a delightful way to kick-start your day, packed with wholesome ingredients that bring together fantastic flavors and textures. Each bite showcases a balance of sweetness and spice, making them the perfect breakfast or snack choice.
-
Flour: I prefer using all-purpose flour for its versatility. If you’re looking for a gluten-free option, you can easily substitute with a 1:1 gluten-free flour blend without losing any taste.
-
Sugar: A mix of granulated sugar gives that initial sweetness, while brown sugar adds depth and moisture, creating a lovely, tender crumb.
-
Carrots: Freshly grated carrots are a must. They lend natural sweetness and moisture to the muffins, making them wonderfully moist.
-
Apples: I like to use grated apple for added flavor and a subtle tartness. It pairs beautifully with the spices, enhancing the overall taste.
-
Nuts: Chopped walnuts or pecans provide a satisfying crunch and a nutty flavor that complements the muffins’ sweetness beautifully.
-
Spices: A touch of cinnamon and nutmeg brings warmth and rich flavor, making your kitchen smell fantastic as they bake.
With these key ingredients, your morning glory muffins will be both delicious and nourishing, perfect for busy professionals looking for a quick, satisfying meal.

These muffins are a beautiful medley of textures and flavors. With a mix of shredded carrots, apples, and raisins, they pack a vitamin-rich punch while still satisfying your sweet tooth. Whether you’re rushing out the door or hosting a weekend brunch, morning glory muffins fit seamlessly into any setting. They’re a great grab-and-go option for busy professionals but still special enough to serve to guests. Plus, they freeze well, allowing you to whip out a treat anytime you’re craving something delicious.

What’s great about morning glory muffins is that you can adapt them to your taste. Try swapping out ingredients like nuts or raisins for your favorites. The eternal question is: can muffins truly be healthy and tasty? With morning glory muffins, the answer is a resounding yes.

Variations of Morning Glory Muffins
Morning Glory Muffins are not just a breakfast favorite; they’re a canvas for creative baking! The beauty of these muffins lies in their versatility, allowing you to experiment with various ingredients to suit your taste buds.
Nutty Additions
Consider tossing in a handful of chopped walnuts or pecans for a delightful crunch. Nuts not only boost the nutritional value but also add an extra layer of flavor.
Fruitful Twists
Want to elevate the fruity profile? Try adding some dried cranberries or raisins for a sweet surprise. Alternatively, you could replace some of the grated carrots with zucchini or even apple for a refreshing twist.
Tropical Flare
Give your morning glory muffins a tropical spin by incorporating shredded coconut or even chopped pineapple. This touch not only adds flavor but brings a hint of sunshine to your mornings.
Spice It Up
If you enjoy a bit of warmth in your flavors, don’t hesitate to add extra spices. A pinch of nutmeg or an additional teaspoon of cinnamon can work wonders, creating a cozy aroma that will have everyone flocking to the kitchen.
Dietary Adjustments
For those watching their sugar intake, consider substituting honey or maple syrup for the sugar. This will provide your muffins with natural sweetness while keeping them moist.
By mixing and matching these delicious variations, your morning glory muffins will never get boring, promising a delightful surprise each time!
Cooking Tips and Notes for Morning Glory Muffins
When I think of morning glory muffins, I picture cozy mornings filled with the sweet aroma of spices and fruits wafting through my kitchen. These delightful muffins pack a punch of flavor and nutrition, making them the perfect way to jump-start your day. Here are some tips to elevate your muffin-making experience!
Choose Your Ingredients Wisely
-
Fresh Grated Carrots: Always use fresh carrots for a more vibrant flavor and moisture. Pre-packaged grated carrots can have a slightly dried-out texture.
-
Apple Varieties: Opt for a tart apple like Granny Smith for a delightful contrast to the sweetness of the muffins. They’ll keep your muffins from becoming too sweet and add a nice crunch.
Don’t Skimp on Measurements
-
Flours and Groats: Ensure you measure your ingredients accurately. Investing in a kitchen scale can help you avoid hefty ingredient discrepancies.
-
Mixing Technique: Avoid overmixing after you add the dry ingredients. Stir just until combined to ensure your muffins are light and fluffy.
Muffin Toppings and Variations
-
Nutty Add-Ins: Feel free to incorporate chopped nuts like walnuts or pecans to add texture. Toasting them lightly beforehand enhances their flavor beautifully.
-
Дried Fruits: Mix in dried fruits like raisins or cranberries for an extra burst of sweetness.
Remember, morning glory muffins are not just a recipe; they’re a chance to express your creativity in the kitchen. Enjoy every scrumptious bite!

Here are some creative ways to elevate your muffin experience.

Consider serving your morning glory muffins alongside a vibrant fruit salad. Think bright berries, juicy citrus, or sliced bananas; the freshness complements the muffin’s rich flavors beautifully.

If you love a little decadence, smear on some cream cheese or a nut butter. The tangy creaminess or crunchy texture adds an extra layer of satisfaction that’s hard to resist.
Enjoy with a Hot Beverage
A warm cup of tea or coffee makes an excellent companion for your muffins. The aromatic flavors of coffee or herbal tea balance the muffin’s sweetness, creating a perfect breakfast moment.

Morning Glory Muffins
- Total Time: 37 minutes
- Yield: 16 muffins 1x
- Diet: Vegetarian
Description
Delicious and moist morning glory muffins packed with wholesome ingredients.
Ingredients
- 2 cups plus 2 tablespoons all-purpose flour
- 1 cup granulated sugar
- 1/4 cup brown sugar
- 2 teaspoons baking soda
- 1 tablespoon plus 1/4 teaspoon ground cinnamon
- 3/4 teaspoon salt
- 1 cup avocado oil (or vegetable oil)
- 3 large whole eggs
- 1 tablespoon pure vanilla extract
- 2 cups grated carrots (roughly 3 to 4 medium carrots)
- 1 medium Granny Smith apple (peeled or unpeeled), grated (about a heaping 3/4 cup worth)
- 1/2 cup crushed pineapple, drained well of juices
- 1/2 cup shredded coconut (unsweetened preferably)
- 1/2 cup chopped pecans
- 1/2 cup golden raisins (or regular raisins)
Instructions
- Begin by gathering and prepping all of your ingredients according to the ingredient list above to have ready and organized for use.
- Preheat the oven to 425°, and line 2 (12 count) muffin tins with paper baking cups, and give a light spritz with cooking spray.
- To a medium-large bowl, add the flour, granulated sugar and brown sugar, baking soda, cinnamon and salt, and whisk to combine and blend well. Set these dry ingredients aside for a moment.
- Then, to another large bowl, add the avocado oil, whole eggs and vanilla, and whisk until thoroughly blended and smooth. Add to this the grated carrots, grated apple, crushed pineapple, shredded coconut, pecans, and raisins, and whisk (or stir) very well to combine.
- Next, add the dry ingredients (flour mixture) into these wet ingredients, and using a rubber spatula, fold them into the batter just until everything is well combined, taking care not to overmix the batter to avoid tough/rubbery muffins. The batter will be dense and thick, which is normal.
- Scoop or spoon the muffin batter into the prepared muffin tins all the way to the top (filling each muffin tin cavity), until you have about 16 muffins (you may end up with 1 or 2 extra muffins).
- Bake the morning glory muffins at 425° for 6 minutes. Then, turn down the oven temperature to 350°, and bake the muffins for about 16 minutes more (for a total of roughly 22 minutes), or until baked through, and a tester skewer comes out clean when inserted into the center of a muffin.
- Allow the morning glory muffins to cool for 4 to 5 minutes in the muffin tins, then carefully place them onto a wire rack to either completely cool, or cool to ‘warm’ before enjoying.
Notes
- These muffins are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
- Feel free to customize with your favorite nuts or dried fruits!
