A delicious cheesy beef and potato casserole that is easy to make and perfect for a hearty meal.

- 1 pound ground beef
- 4 cups frozen diced potatoes
- 1 can (10 oz) cream of mushroom soup
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 1 small onion, chopped
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons butter, cut into small cubes
Instructions
- In a skillet over medium heat, cook ground beef and chopped onion until beef is browned and onion is soft. Season with garlic powder, salt, and pepper. Drain excess fat.
- In a large bowl, mix cream of mushroom soup, sour cream, and 1 cup of cheddar cheese. Add cooked beef mixture and stir to combine.
- Grease a 9×13-inch baking dish. Spread frozen diced potatoes evenly in the bottom of the dish.
- Pour beef mixture over the potatoes and spread evenly.
- Sprinkle the remaining 1 cup of cheddar cheese on top and dot with butter.
- Cover with foil and bake at 375°F (190°C) for 35 minutes.
- Remove foil and bake for an additional 10–15 minutes, until the top is golden and bubbling.
- Let it rest for 5 minutes before serving.
Notes
- This dish is great for leftovers and can be easily reheated.
