  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup chopped cilantro (for garnish)
  • 4 large tortillas (flour or corn)
  • 1 cup shredded lettuce (for filling)
  • 1 cup sliced avocado (for topping)
  • 1/2 cup sour cream (or vegan alternative)

Instructions

  1. In a skillet, heat olive oil over medium heat. Add the chickpeas, cumin, smoked paprika, garlic powder, and onion powder. Sauté for about 5 minutes until heated through.
  2. Add corn and diced tomatoes to the skillet. Cook for an additional 5 minutes, stirring occasionally. Remove from heat and stir in chopped cilantro.
  3. Warm the tortillas in a dry skillet or microwave until pliable.
