Ingredients

- 3 boneless, skinless chicken breasts (about 1 lbs)
- 1 cup wild rice blend
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 6 cups low-sodium chicken broth
- 1 cup cream or milk
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper to taste
Instructions
- Dice the onions, carrots, and celery into small pieces for even cooking.
- (Optional) Sauté onions and garlic in a skillet until fragrant.
- Layer the chicken at the bottom of the slow cooker, followed by the wild rice, vegetables, herbs, salt, and pepper.
- Pour chicken broth over ingredients until submerged.
- Cook on low for 6-8 hours or high for 4 hours.
- About 30 minutes before serving, stir in cream or milk.
Notes
- For extra flavor, consider adding a splash of lemon juice before serving.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days.
