Description

A hearty and comforting slow cooker recipe featuring chicken, wild rice, and vegetables.


Ingredients

  • 3 boneless, skinless chicken breasts (about 1 lbs)
  • 1 cup wild rice blend
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 cup cream or milk
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste

Instructions

  1. Dice the onions, carrots, and celery into small pieces for even cooking.
  2. (Optional) Sauté onions and garlic in a skillet until fragrant.
  3. Layer the chicken at the bottom of the slow cooker, followed by the wild rice, vegetables, herbs, salt, and pepper.
  4. Pour chicken broth over ingredients until submerged.
  5. Cook on low for 6-8 hours or high for 4 hours.
  6. About 30 minutes before serving, stir in cream or milk.
