A delicious and easy one-pan meal featuring ground turkey, rice, and taco flavors.
Ingredients

- 1 lb ground turkey
- 1 cup long-grain white rice
- 2 tsp taco seasoning
- 1 cup bell peppers, chopped (mixed colors)
- 1 medium onion, finely chopped
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup shredded cheddar cheese
- 2 tbsp fresh cilantro, chopped
Instructions
- Cook the rice according to package instructions; set aside.
- In a large skillet over medium heat, heat a splash of olive oil. Sauté chopped onions and bell peppers until softened, about 5 minutes.
- Add ground turkey and cook until browned, breaking it apart as it cooks—about 7 minutes.
- Stir in taco seasoning, diced tomatoes (with juices), and black beans; simmer for 5 minutes.
- Fold in the cooked rice until well combined and heated through.
- Remove from heat; top with shredded cheddar cheese and cover briefly to melt.
- Garnish with cilantro before serving.
Notes
- Feel free to customize with any vegetables you have on hand.
- Can substitute ground beef or chicken for the turkey.
