Description

Deliciously roasted red potatoes seasoned with garlic and Italian herbs.


Ingredients

Scale
  • 3 pounds red potatoes
  • ¼ cup olive oil
  • 1 ½ teaspoons salt
  • 1 teaspoon pepper
  • 2 Tablespoons minced garlic
  • 2 Tablespoons Italian Seasoning

Instructions

  1. Preheat oven to 400℉.
  2. Cut potatoes into cubes and place in a large bowl. Add olive oil, salt, pepper, garlic and Italian seasoning and toss until evenly coated.
  3. Cover a baking sheet with foil and spray with nonstick cooking spray. Spread potatoes out in one even layer on prepared baking sheet.
  4. Roast in the oven for 45 minutes to an hour, or until potatoes are browned and crisp.

Notes

  • For extra crispiness, you can turn the broiler on for the last few minutes of roasting.
