- 12 ounces linguine or spaghetti
- 2 lobster tails
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 small shallot, finely diced
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon red pepper flakes
- 1 tablespoon tomato paste
- 1 tablespoon lemon juice
- 2 tablespoons fresh parsley, chopped
- Salt to taste
- Black pepper to taste
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil and cook the linguine until al dente according to package instructions. Reserve about 1 cup of pasta water before draining.
- Prepare the Lobster: Using kitchen scissors, carefully cut through the lobster shell and remove the meat. Chop the lobster into bite-sized pieces.
- Sauté the Aromatics: In a large skillet, heat olive oil and 1 tablespoon butter over medium heat. Add shallots and garlic, cooking until fragrant and softened. Stir in the tomato paste and cherry tomatoes, allowing them to soften and release their juices.
- Cook the Lobster: Add the lobster pieces to the skillet and cook for about 3–4 minutes until opaque and tender.
- Create the Sauce: Pour in the heavy cream and stir gently. Add Parmesan cheese, red pepper flakes, lemon juice, and the remaining butter. Allow the sauce to simmer until slightly thickened. If needed, add reserved pasta water a little at a time to loosen the sauce.
- Toss the Pasta: Add the cooked pasta directly into the sauce and toss until evenly coated. Sprinkle with fresh parsley and freshly cracked black pepper before serving.
Notes
- Be careful not to overcook the lobster or it can become rubbery.
