Description
A delicious and creamy mashed potato dish with kale and smoked gouda cheese, perfect for a comforting meal.
Ingredients
Scale
- 2½ pounds russet potatoes (about 3 to 4 large potatoes)
- 5 kale stalks (about half a bunch)
- 2 garlic cloves (minced)
- 4 tablespoons unsalted butter (room temperature)
- ½ cup sour cream
- 1 teaspoon kosher salt
- 2 cups shredded smoked gouda cheese (divided)
- 2 tablespoons warm whole milk
Instructions
- Peel and chop the potatoes into 1 inch chunks. Set aside. Remove the leaves from the kale stalks and finely chop them into small pieces. Discard the stems.
- Dump the potato chunks into a large pot and cover with cool water by at least an inch.
- Bring the potatoes to a boil over medium-high heat. Once it reaches a boil, let it boil for 10 minutes or until the potatoes are fork-tender. Add the kale and boil for 2 more minutes.
- Drain the kale and potatoes, then transfer them to a large bowl.
- Add the garlic, butter, sour cream, salt, and 1 ½ cups of gouda cheese. Use a hand mixer or potato masher to mix until creamy and smooth.
- If the potatoes are too thick, add a bit of warm whole milk and mix until creamy.
- Serve warm with the remaining gouda cheese on top.
