Description

This Creamy Chicken Casserole is a comforting dish that combines tender chicken with a cheesy cream sauce, rice, and green chiles.


Ingredients

Scale
  • 1 lb chicken breasts (boneless, skinless, cut into bite size cubes)
  • 1 block cream cheese (room temperature)
  • 1/2 tsp salt
  • 1 tsp granulated garlic
  • 1 c chicken broth
  • 4 oz green chiles (canned, or char fresh hatch chiles, peel away skin and chop up tender insides)
  • 1 c rice (white, uncooked, not instant)
  • 1 c cheese (sharp cheddar)
  • 1 tbsp cornstarch

Instructions

  1. Preheat oven to 375℉ and spray a baking dish with cooking oil spray, set aside.
  2. In a medium bowl, place the cream cheese, salt and garlic powder. Warm the broth in the microwave for 30 seconds so it is easier to whisk everything together. Pour 3/4s of the warm chicken broth in and whisk until you have a smooth cream cheese sauce. Then whisk in cornstarch until smooth.
  3. Add the green chiles and stir. Taste the sauce and adjust the salt if desired, set aside. Add chicken pieces and the rest of the broth, stir together.
  4. Pour the rice into the baking dish, then add the cream cheese sauce with chicken, smoothing it into an even layer.
  5. Sprinkle the cheese over the dish and place in the center of the oven. Bake for 45 to 50 minutes. Check the casserole after 45 minutes; the chicken should be cooked through and the rice tender.
  6. If the mixture is still a little wet, continue to bake until excess liquid has absorbed. Allow to cool for 10 minutes for everything to solidify and sauce to thicken more, then scoop out and enjoy.
  7. Great with a small dollop of sour cream on top!

Notes

  • This casserole can be made ahead of time and stored in the refrigerator.
  • For added flavor, you can season the chicken with your favorite spices before cooking.
