Description

A hearty skillet recipe with ground beef, potatoes, and spices.


Ingredients

  • 1 tablespoon olive oil (not extra virgin)
  • 1 pound potatoes (peeled and diced small)
  • 1 teaspoon smoked paprika (divided)
  • ½ teaspoon salt (divided)
  • ¼ teaspoon ground black pepper (divided)
  • 1 tablespoon olive oil
  • 1 medium yellow onion (finely diced)
  • 1 pound lean ground beef (about 10-12% fat)
  • ½ teaspoon onion powder
  • ½ teaspoon ground cumin
  • 2 medium garlic cloves (minced)
  • ½ cup shredded sharp cheddar cheese
  • 1 tablespoon chopped fresh chives or parsley (for garnish)

Instructions

  1. Heat 1 tablespoon of olive oil in a large well-seasoned or nonstick pan over medium-high heat.
  2. Add the diced potatoes and season with ½ teaspoon smoked paprika, ¼ teaspoon salt, and ⅛ teaspoon ground black pepper.
  3. Cook, stirring occasionally, until the potatoes are golden and tender, about 10-12 minutes. Remove to a plate and set aside.
  4. In the same pan, add another 1 tablespoon of olive oil and the diced onion. Cook for about 2 minutes until softened and translucent.
  5. Add the ground beef, breaking it apart with a spoon. Season with ½ teaspoon onion powder, ½ teaspoon smoked paprika, ½ teaspoon cumin, ¼ teaspoon salt, and ⅛ teaspoon ground black pepper. Cook until the beef is browned and no longer pink.
  6. Return the cooked potatoes to the pan. Add the minced garlic and stir everything together. Cook for 1 minute to combine the flavors.
  7. Taste and adjust the seasoning if needed. If the potatoes are still a bit firm, add ¼-½ cup of water or broth, cover with a lid, and cook for about 5 minutes, stirring occasionally, until tender.
  8. Remove the pan from heat and sprinkle the shredded cheddar cheese on top. Cover with a lid for 2-3 minutes until the cheese melts.
  9. Garnish with chopped chives or parsley and serve warm.

Notes

  • For added flavor, consider using fresh herbs in addition to the chives or parsley.
  • This dish pairs well with a garden salad on the side.
