A delicious tart featuring caramelized onions encased in puff pastry.
Ingredients

- 3 tbsp butter
- 2 large onions, (thickly sliced into rounds)
- 1 tsp sugar
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp minced garlic
- 1 tsp fresh thyme leaves (or ½ tsp dried)
- 1 sheet puff pastry
- 1 tsp olive oil
- 1 tsp balsamic vinegar
Instructions
- Preheat the oven to 400°F (200°C).
- Melt the butter in an oven-safe skillet over medium heat.
- Add the onion slices and cook for about 10 minutes, letting them soften and release moisture.
- Sprinkle with sugar, salt, and pepper, then continue cooking for another 5 minutes, gently turning, until golden and caramelized.
- Turn off the heat. Sprinkle the onions with garlic and thyme, and drizzle with balsamic vinegar if using.
- Lightly grease the skillet edges with olive oil.
- Lay the puff pastry over the onions, tucking the edges down around the sides like you’re wrapping them in a blanket.
- Bake for 20–22 minutes, until the pastry is puffed, deeply golden, and irresistible-looking.
- Let the tart rest for 5 minutes, then carefully invert onto a serving plate.
- Slice and serve warm.
