Description

This Pear Almond Coffee Cake pairs wonderfully with coffee or tea and makes for a delightful breakfast or dessert!


Ingredients

  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • 2 medium ripe pears, peeled, cored, and sliced thinly
  • ½ cup sliced almonds (plus extra for topping)
  • 1 teaspoon almond extract
  • Powdered sugar (for dusting, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, using an electric mixer, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, mixing well after each addition. Then, add the vanilla extract and almond extract, mixing until combined.
  5. Add the sour cream to the mixture and stir until smooth.
  6. Gradually add the dry ingredient mixture to the wet ingredients, mixing just until combined. Be careful not to overmix.
  7. Gently fold in the sliced pears and ½ cup of sliced almonds into the batter, ensuring they are evenly distributed.
  8. Pour the batter into the prepared cake pan, smoothing the top with a spatula. Sprinkle additional sliced almonds on top for garnish.
  9. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  10. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. If desired, dust with powdered sugar before serving.
  11. Slice and serve the cake warm or at room temperature.
