Ingredients

  • 20 pieces Ladyfingers
  • 1 cup Espresso or Strong Coffee
  • 500 grams Mascarpone Cheese
  • 200 ml Coconut Cream
  • 100 grams Sugar
  • 1 teaspoon Vanilla Extract
  • 50 grams Coconut Flakes
  • 2 tablespoons Cocoa Powder

Instructions

  1. Brew your strong espresso and let it cool down to room temperature. Stir in sugar until fully dissolved.
  2. In a mixing bowl, combine mascarpone cheese, coconut cream, sugar, and vanilla extract. Whisk until smooth.
  3. Quickly dip each ladyfinger in the cooled coffee mixture.
  4. In a serving dish, create layers starting with soaked ladyfingers followed by the mascarpone filling. Repeat at least three times.
  5. Dust the top layer with cocoa powder and sprinkle coconut flakes over it. Cover and refrigerate overnight.
  6. Slice and serve cold.
