Description

Delicious chocolate oat cookies loaded with semi-sweet and dark chocolate chunks.


Ingredients

Scale
  • 1 stick (1/2 cup) salted butter, at room temperature
  • 1/2 cup coconut oil, melted
  • 1 cup brown sugar
  • 1/3 cup granulated sugar
  • 2 large eggs, plus 1 egg yolk
  • 1 tablespoon vanilla extract
  • 2 1/2 cups old fashioned oats
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup semi-sweet chocolate chips or chunks
  • 1 cup chopped dark chocolate
  • flaked sea salt

Instructions

  1. Preheat the oven to 350°F.
  2. Line a baking sheet with parchment paper.
  3. Mix all ingredients except the chocolate in a mixing bowl until fully combined.
  4. Fold in the chocolate.
  5. Roll the dough into rounded 1-tablespoon balls and arrange on the baking sheet.
  6. Bake for 6 minutes, then rotate the pan, then tap it on the counter 1 time.
  7. Bake another 2–3 minutes, until the edges are set and the centers are just barely glossy.
  8. Cool on the baking sheet to finish the cooking.
  9. Sprinkle with flaky salt.

Notes

  • For best results, do not overmix the dough after adding the chocolate.
  • Make sure the baking sheet is lined to prevent sticking.
