A delicious and healthy tofu sandwich that is packed with flavor and crunch.
Ingredients

- 1 block (14 oz) firm or extra-firm tofu, pressed and drained
- 4 slices whole-grain bread
- 1 cup lettuce, washed and torn
- 1 large tomato, sliced
- ½ cucumber, thinly sliced
- 4 tablespoons mayo or vegan mayo
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions
- Cut the pressed tofu block into ½-inch thick slices.
- Sprinkle the sliced tofu with salt and pepper.
- In a non-stick skillet over medium heat, add a splash of oil and place the tofu slices in the skillet. Cook for about 3-4 minutes per side, or until golden brown and crispy.
- Alternatively, bake the tofu at 400°F for 25 minutes, flipping halfway through.
- While the tofu cooks, toast the slices of bread until golden and crispy.
- Spread mayo or vegan mayo on one or both slices of toasted bread.
- Layer the cooked tofu on one piece, then add lettuce, tomato, and cucumber.
- Top with the second slice of bread and gently press down. Cut in half if desired.
Notes
- Use firm or extra-firm tofu for best results.
- Toast the bread for added crunch.
- Can use any leafy lettuce.
- Adjust salt and pepper to taste.
- For a vegan option, use vegan mayo.
