Description

A delicious and healthy tofu sandwich that is packed with flavor and crunch.


Ingredients

Scale
  • 1 block (14 oz) firm or extra-firm tofu, pressed and drained
  • 4 slices whole-grain bread
  • 1 cup lettuce, washed and torn
  • 1 large tomato, sliced
  • ½ cucumber, thinly sliced
  • 4 tablespoons mayo or vegan mayo
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions

  1. Cut the pressed tofu block into ½-inch thick slices.
  2. Sprinkle the sliced tofu with salt and pepper.
  3. In a non-stick skillet over medium heat, add a splash of oil and place the tofu slices in the skillet. Cook for about 3-4 minutes per side, or until golden brown and crispy.
  4. Alternatively, bake the tofu at 400°F for 25 minutes, flipping halfway through.
  5. While the tofu cooks, toast the slices of bread until golden and crispy.
  6. Spread mayo or vegan mayo on one or both slices of toasted bread.
  7. Layer the cooked tofu on one piece, then add lettuce, tomato, and cucumber.
  8. Top with the second slice of bread and gently press down. Cut in half if desired.

Notes

  • Use firm or extra-firm tofu for best results.
  • Toast the bread for added crunch.
  • Can use any leafy lettuce.
  • Adjust salt and pepper to taste.
  • For a vegan option, use vegan mayo.
