- 3 cups cooked jasmine or basmati rice (preferably day-old for better texture)
- 2 large eggs, lightly beaten
- 4–5 green onions (scallions), chopped (white and green parts separated)
- 2 cloves minced garlic
- 3 tablespoons soy sauce (adjust to taste)
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil (for frying)
- 1 cup frozen peas and carrots mix (thawed)
- Salt to taste
- Pepper to taste
- Additional chopped scallions and sesame seeds (optional garnish)
Instructions
- Begin by preparing your ingredients: chop the scallions, mince the garlic, and ensure your peas and carrots are thawed. This will help streamline the cooking process.
- In a large skillet or wok, heat the 2 tablespoons of vegetable oil over medium-high heat. Allow it to become hot but not smoking, about 2 minutes.
- Add the frozen dumplings to the skillet in a single layer. Cook for 5-7 minutes, turning occasionally until they are golden brown and heated through. Avoid overcrowding the pan, as this can cause steaming instead of frying.
- Once the dumplings are cooked, push them to the side of the skillet. Add the minced garlic and the white parts of the chopped scallions. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
- Next, add the cooked rice to the skillet. Break it up with a spatula to prevent clumping, and stir-fry for 3-5 minutes until heated through and slightly crispy.
- Mix in the thawed peas and carrots, and stir everything together for another 2-3 minutes until well combined.
- Pour the 3 tablespoons of soy sauce and the 1 tablespoon of sesame oil over the rice mixture. Stir everything to ensure the rice is evenly coated, adjusting seasoning with salt and pepper to taste.
- Make a well in the center of the skillet and pour in the lightly beaten eggs. Let them cook for about 1-2 minutes until they begin to set, then scramble them into the rice mixture until fully cooked.
- Finally, fold in the green parts of the scallions, giving everything a good mix. Cook for an additional minute to incorporate the flavors.
- Serve immediately, garnished with extra scallions and sesame seeds if desired, enjoying the vibrant flavors and enticing aroma.
