  • 45 green onions (scallions), chopped (white and green parts separated)
  • 2 cloves minced garlic
  • 3 tablespoons soy sauce (adjust to taste)
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil (for frying)
  • 1 cup frozen peas and carrots mix (thawed)
  • Salt to taste
  • Pepper to taste
  • Additional chopped scallions and sesame seeds (optional garnish)

Instructions

  1. Begin by preparing your ingredients: chop the scallions, mince the garlic, and ensure your peas and carrots are thawed. This will help streamline the cooking process.
  2. In a large skillet or wok, heat the 2 tablespoons of vegetable oil over medium-high heat. Allow it to become hot but not smoking, about 2 minutes.
  3. Add the frozen dumplings to the skillet in a single layer. Cook for 5-7 minutes, turning occasionally until they are golden brown and heated through. Avoid overcrowding the pan, as this can cause steaming instead of frying.
  4. Once the dumplings are cooked, push them to the side of the skillet. Add the minced garlic and the white parts of the chopped scallions. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
  5. Next, add the cooked rice to the skillet. Break it up with a spatula to prevent clumping, and stir-fry for 3-5 minutes until heated through and slightly crispy.
  6. Mix in the thawed peas and carrots, and stir everything together for another 2-3 minutes until well combined.
  7. Pour the 3 tablespoons of soy sauce and the 1 tablespoon of sesame oil over the rice mixture. Stir everything to ensure the rice is evenly coated, adjusting seasoning with salt and pepper to taste.
