Description

This hearty meatball soup is perfect for a family dinner and is packed with flavor.


Ingredients

  • 1 lb lean ground turkey or chicken
  • ¼ cup grated Parmesan cheese
  • ¼ cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon chopped parsley
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 2 cans white beans, drained and rinsed
  • 2 cups chopped spinach or kale
  • ½ teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh lemon juice (optional)

Instructions

  1. Mix all meatball ingredients and form small meatballs (about 1 tablespoon each).
  2. In a large pot, heat olive oil. Sauté onion, carrots, celery, and garlic for 5–6 minutes.
  3. Add broth and bring to a gentle boil.
  4. Drop meatballs into the simmering broth. Cook for 10–12 minutes until fully cooked.
  5. Stir in white beans, greens, and Italian seasoning. Simmer for 5 more minutes.
  6. Adjust seasoning and add a squeeze of lemon if desired.

Notes

  • This soup is great for meal prep and can be frozen for later use.
