This hearty meatball soup is perfect for a family dinner and is packed with flavor.
Ingredients

- 1 lb lean ground turkey or chicken
- ¼ cup grated Parmesan cheese
- ¼ cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 tablespoon chopped parsley
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 6 cups low-sodium chicken broth
- 2 cans white beans, drained and rinsed
- 2 cups chopped spinach or kale
- ½ teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh lemon juice (optional)
Instructions
- Mix all meatball ingredients and form small meatballs (about 1 tablespoon each).
- In a large pot, heat olive oil. Sauté onion, carrots, celery, and garlic for 5–6 minutes.
- Add broth and bring to a gentle boil.
- Drop meatballs into the simmering broth. Cook for 10–12 minutes until fully cooked.
- Stir in white beans, greens, and Italian seasoning. Simmer for 5 more minutes.
- Adjust seasoning and add a squeeze of lemon if desired.
Notes
- This soup is great for meal prep and can be frozen for later use.
- Feel free to add your favorite vegetables to the soup.
