A refreshing pasta salad with cherry tomatoes, avocado, and a zesty lime dressing.
Ingredients

- 8 oz short pasta (like rotini or penne)
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cup fresh cilantro, chopped
- 1/4 cup red onion, thinly sliced
- 1/4 cup olive oil
- Juice of 2 limes (about 1/4 cup)
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions in salted water until al dente. Drain and rinse under cold water.
- In a bowl, whisk together olive oil, lime juice, salt, and pepper.
- Chop the tomatoes, avocado, cilantro, and red onion into bite-sized pieces.
- In a large bowl, combine cooled pasta with chopped veggies. Pour the dressing over the salad and gently toss to combine.
- Chill in the fridge for at least 30 minutes before serving.

- This salad is great for meal prep or potlucks.
- Feel free to add grilled chicken or shrimp for extra protein.
