  • 2 large eggs
  • 1/2 cup milk

  • 1/2 cup unsalted butter, melted
  • 4 cups all-purpose flour
  • 1/2 teaspoon salt
  • Vegetable oil, for frying
  • Powdered sugar, for dusting

Instructions

  1. In a large bowl, combine warm water, sugar, and yeast. Let sit for 5-10 minutes until foamy.
  2. Whisk in eggs, milk, vanilla extract, and melted butter.
  3. Add flour and salt gradually, mixing until a dough forms.
  4. Knead the dough until smooth, then cover and let rise in a warm place for 1-2 hours.
  5. Punch down the dough and roll it out on a floured surface to about 1/4-inch thickness.
  6. Cut into 2-inch squares and let rest while you heat oil in a deep fryer or large pot to 350°F.
  7. Fry beignets in batches until golden brown on both sides, about 2-3 minutes per side.
  8. Drain on paper towels and generously dust with powdered sugar. Serve warm.
