Instructions
- In a large bowl, combine warm water, sugar, and yeast. Let sit for 5-10 minutes until foamy.
- Whisk in eggs, milk, vanilla extract, and melted butter.
- Add flour and salt gradually, mixing until a dough forms.
- Knead the dough until smooth, then cover and let rise in a warm place for 1-2 hours.
- Punch down the dough and roll it out on a floured surface to about 1/4-inch thickness.
- Cut into 2-inch squares and let rest while you heat oil in a deep fryer or large pot to 350°F.
- Fry beignets in batches until golden brown on both sides, about 2-3 minutes per side.
- Drain on paper towels and generously dust with powdered sugar. Serve warm.
